Matcha Basque Cheesecake

Ingredients

  • 16 oz Cream cheese, room temperature
  • 1/2 cup White sugar
  • 15 - 20 grams Matcha powder
  • 1 tbsp Cornstarch
  • 1 tsp Vanilla extract
  • 3 Large eggs, room temperature
  • 3/4 cup Heavy cream

Directions

  1. Preheat the oven to 465F and line a 6 inch cake tin with baking paper
  2. Place the cream cheese in a large bowl and beat until smooth
  3. Add the sugar and mix until well combined
  4. Add the matcha powder, cornstarch and vanilla extract and beat until smooth and lump-free
  5. Whisk in the eggs, then add the cream and whisk until smooth
  6. Pour into the lined cake tin and bake for 25 mins
  7. Let the cake rest for 10 mins
  8. Place in the fridge to cool overnight or a minimum of 4 hours
  9. Unmold, slice and enjoy!
